Tempeh jambalaya.
Tonight’s dinner was amazing! I absolutely love this recipe. My Best bud, who is Cajun, came over this afternoon for dinner. So I decided I’d make something with a bit more spice. It was also my first time cooking with tempeh! It was soooo good! By far my favorite dish so far!
Ingredients:
Olive oil.
Tempeh.
Green/Red pepper.
Green onion.
Celery.
Rice.
Red beans.
Garlic.
Jalapeño.
Salt.
Creole seasoning.
Method:
It’s simple! However it takes about an hour to cook. First heat some olive some in a large pot. Then add tempeh. Then add a small amount of soy sauce and creole seasoning. Let that cook for about 5 mins. After it is cooked set the tempeh on a plate and we will be adding it later so keep it close! After the tempeh is removed add more oil to the pot and two cups of water. Sauté the veggies. Then add the rice and soy sauce and a little more creole seasoning. let that cook until the rice turns opaque. Then add the tempeh back to the pot, as well as the red beans. Let it simmer off the burner for ten mins. Serve and enjoy! Trust me you will love this recipe.

Unbleached flour.
Baking powder.
Cinnamon.
Sugar in the raw.
Nutmeg.
Vanilla extract.
Canola oil.
H2O.

Delicious stir fry!
So for dinner this after noon I decided to make a stir fry! I wasn’t too sure how the outcome would be; however, I was pleasantly surprised. It was also extremely quick to prepare. I was very happy with the eight bucks I spent at the grocery store this afternoon.
Ingredients:
Green & yellow squash.
Green & red pepper.
Red onion.
Jalapeño.
Mushrooms.
Green beans.
Olive oil.
Garlic.
Sea salt.
Method:
First, I put a small amount of olive oil in a sauce pan (then covered with a lid). While letting the pan/oil heat on low temperature, go ahead and chop your veggies. Place the veggies in the pan with the oil and replace the lid and turn temperature to high. Watch for the onions to turn opaque and for the zucchini to become limber. Add water throughout so the veggies can simmer. I also add quite a bit of soy sauce to the stir fry. When the veggies are ready; then, serve over brown rice.
Also! If you’d like to add tofu to the mixer then marinade the tofu for a couple of hours then place the tofu in the pan with all the veggies when the onions turn opaque and the zucchini becomes limber. After the tofu is added your meal should be complete in about 5 - 10 mins. Enjoy! :D

I feel like I haven’t fully introduced the family. :). You know Stephanie and myself… Now meet the children! Kilo! Our beautiful, but extremely annoying pit bull. We love him so much. But he is really mischievous. The other is Rooby! She is daddy’s girl she was a gift to me on my 20th birthday from Stephanie. A Mut, but she is her own breed. She is a chiller and a super cuddler. Rooby is the older of the two; she turns one in February and kilo turns one in April. We love our family. :)
Simple pasta marinara
If there is one food I miss from being an omnivore it’s spaghetti! So, I have mixed a couple things up for this delicious vegan entree.
Also, as a side note to most of my recipes: I am awful with measurements and most of the recipes I post will not have measurements unless they are absolutely needed. I think we are all different and we all like different amounts of the foods we love :). Do I will provide ingredients! As well as my method!
Ingredients:
Box of organic whole grain noodles of your choice.
Red onion.
Mushrooms.
Red pepper.
Green pepper.
Tomato paste.
Garlic.
Sea salt.
Cilantro.
And a dash of chives.
Method:
First, grab yourself a pot and fill half full of water. While waiting on your water to start boiling, grab a knife and a cutting board. Chop fresh mushrooms, red/green peppers, garlic, cilantro, and red onions. After each veg is chopped, then place it in a sauce pan. When all veggies are chopped then place just a small amount of water in the pan. Enough for the veggies to bathe in. Simmer and steam the veggies until you get a great aroma and start to see the onions kind of turning clearish (that’s what I based my veggies off of). Next, add tomato paste to your pan with the veggies. Keep an eye on the pan and keep stirring it so nothing sticks. Place a lid on the pan and let simmer. By this time your noodles should be getting just right. Strain noodles and wait for your marinara to complete (about 15 mins or so). Dibby out noodles and top with marinara. Sprinkle chives. Bam!

My name is Treavor Stanfield. My beautiful girl friend, Stephanie, and I have vowed to take on an extremely tough challenge for us. As former omnivores, and abusers of the typical American diet, I can say this is a partially unrealistic idea. I never thought that I would ever see the day that I completely quit eating meats. Also, we have decided to go completely vegan and stop all intake of dairy products, and again, meats. In this blog I will be mainly posting meals and some ideas of new recipes. I believe there are a ton of people who were just like me and have maybe considered going vegetarian or vegan. I would feel accomplished one day if this page helps those people begin a new journey in their lives.
Eating healthy was always something that I’d have liked to do throughout my life. However, growing up in a small town in the north Georgia mountains had put large restraints to any style of life that isn’t “the norm.” The norm would be a nice big healthy steak and cheese fries with a glass of milk. If someone were to try something for dinner that was actually healthy then they were quickly asked the question “what the hell? You on a diet?” So! I think that question and that reaction had always shielded me away from eating healthy; I never wanted to be the snooty diet guy type. Now I see the actual reason for eating better, not only for “dieting” but just to eat healthy!
So! Follow me if you enjoy delicious vegan foods! I will share with you recipes I find and expect the same in return :). I will try to post photos of every entrée. Also, I shop with a tight budget so all my meals are pretty inexpensive! Enjoy!!
